1 Creamed Spinach Linguine

Boil a kettle for step 3

Drain the anchovies and chop finely

Peel the onion and slice finely

Peel and finely chop the garlic

2 Creamed Spinach Linguine

Quarter the lemon(s)

Chop the spinach roughly

3 Creamed Spinach Linguine

Cook the pasta in a pot of salted boiling water for 8-10 min, stirring occasionally

Drain and retain a cup of pasta water for step 7

4 Creamed Spinach Linguine

Meanwhile, add 1-2 tbsp olive oil to a large, wide-based pan (preferably non-stick) on a medium heat

Add the anchovies and cook for 1 min, stirring constantly

Add the onion and cook for 5-7 min or until caramelising, stirring occasionally

5 Creamed Spinach Linguine

Meanwhile, strip the thyme leaves and discard the stalks

Add the garlic and thyme to the onions and cook for a further 1 min, then reduce the heat to low

6 Creamed Spinach Linguine

Squeeze over the juice of 1/2 the (whole) lemon and stir

Add 3/4 of the double cream and cook for 1-2 min or until warmed, stirring constantly

Add the spinach and stir through gently until slightly wilted

7 Creamed Spinach Linguine

Add the pasta and mix well, then remove from the heat

Add the remaining cream and stir through

Add some of the reserved pasta water if a little dry
