1 Classic Kedgeree With Roast Cherry Toms

Preheat the oven to 180°C/ 160°C (fan)/ 350°F/ Gas 4

Boil a kettle

Cut the cherry tomatoes in half and add them to a baking tray

Season them with a pinch of salt, sugar and pepper and drizzle them with olive oil

Put the tray in the oven for 15-20 min or until softened

Meanwhile, peel and finely chop the brown onion[s]

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a very large knob of butter over a medium heat

Once melted, add the chopped onion with a generous pinch of salt and cook for 4-5 min or until softened but not coloured

Meanwhile, add the eggs to a pot of boiled water with a pinch of salt over a high heat (salt prevents the eggs from cracking)

Once boiling, boil for exactly 7 min for perfect, mid-boiled eggs

Meanwhile, fill a bowl of very cold water with ice (Gousto's ice packs are perfect) ready for step 5

Once the onion has softened, add the curry powder and turmeric and cook for 1 min or until fragrant

Add the basmati rice and cook for a further 1 min, stirring to coat the grains in all of the spices

Add 350ml [700ml] cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium-low and cook, covered for 10 min

Meanwhile, pat the smoked basa fillets dry with kitchen paper and season them with a pinch of salt and pepper

Chop the parsley finely, including the stalks

Once the eggs are done, drain and add them to the ice water (this stops them cooking further)

Tip: No ice? Run them under very cold running water for 3 min, then set aside in a bowl of cold water

Once the rice is cooked, add the smoked basa fillets to the pan and cook, covered, for 5-7 min or until the fish is cooked through

Tip: Your fish is cooked when it turns opaque and flaky

Meanwhile, peel the eggs and cut them into quarters

Once cooked, gently flake the fish and fluff the rice with a fork

Season with a generous pinch of salt and pepper and stir through the chopped parsley – this is your classic kedgeree
