This rather dramatic looking salad is much simpler than it looks. Black rice, which is almost too good for you, is nutty, rich and delicious. It's also really easy to cook so it gets the thumbs up from us. It's tumbled with fresh rocket salad. King prawns in a spicy tomato and garlic sauce sit warm and happily atop.

Boil a kettle
Add the black rice to a pot with plenty of boiled water and cook for 30 min or until tender with a slight bite
Once cooked, drain and set aside
Meanwhile, slice (don't chop!) the garlic finely
Chop the cherry tomatoes in half
Cut the lemon[s] in half
Chop the parsley finely, including the stalks, separating the stalks from the leaves
Squeeze 1 tbsp [2 tbsp] lemon juice into a large mixing bowl
Combine with 2 tbsp [4 tbsp] olive oil and season with a generous pinch of salt and pepper then set aside - this is your lemon dressing
Wash, dry and chop the rocket salad roughly
Heat a large, wide-based pan (preferably non-stick) with 3-5 tbsp olive oil over a medium-low heat
Once hot, carefully add the sliced garlic and cook until very slightly golden then remove with a slotted spoon and set aside on some kitchen paper - these are your garlic crisps
Sprinkle your garlic crisps with salt and set aside until serving, keeping the pan and garlic oil for later!
Wait until your black rice has already been cooking for 20 min before proceeding with this step!
Return the pan of garlic oil to a medium-high heat
Once hot, add the chopped cherry tomatoes and parsley stalks with a big pinch of salt and cook for 3-4 min or until they're beginning to burst
Add the cayenne pepper (can't handle the heat? Go easy!) and king prawns and cook for 4-5 min or until the prawns have turned pink and are cooked through
Add 50ml [100ml] water and cook until the tomatoes and garlic oil form a thick sauce
Once thickened, season with a generous pinch of salt, stir through the remaining chopped parsley and remove from the heat
Rinse the cooked black rice under cold water until cool
Shake off any excess water from the rice or dry on some kitchen paper, then toss the chopped rocket and black rice together in the bowl of lemon dressing - this is your black rice salad
Serve the king prawns and sauce over the black rice salad
Serve any remaining lemon, cut into wedges, and garnish with the garlic crisps
