Now, let's get started!

Boil a kettle

Meanwhile, slice the courgette[s] into quarters lengthways, then slice finely

3 Ten-Min Thai Green Haddock & Courgette Curry

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a medium heat

Once hot, add the green curry paste and ginger paste to the pan and cook for 30 sec

Add the coconut milk and sliced courgette with a small splash of water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 1-2 min or until beginning to thicken

Meanwhile, microwave your steamed brown basmati rice according to packet instructions

Tip: if you're cooking two packets, pop them in together but increase microwave cook time accordingly!

Add the haddock bites to the pan and cook, covered, for 2 min or until cooked through

Tip: your fish is cooked once it turns opaque and flakes easily

Note: please ensure you cook your fish thoroughly (until piping hot!) as cooking equipment varies
