Before you begin...

Get all your ingredients and equipment ready

Skim through these steps

Wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)


Now, let's get started!

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of olive oil over a medium-high heat

Meanwhile, drain the sweetcorn

Cut the lime[s] into quarters


Once the pan is hot, add the smoked basa to one side of the pan

Squeeze the juice of 1 [2] lime quarters over the fish and season generously with salt and pepper

Sprinkle the ground cumin, paprika and dried oregano over the fish and add the drained sweetcorn to the other side of the pan

Cook the basa for 3 min on each side or until cooked through


While the fish is cooking, wash the little gem lettuce

Shred the lettuce roughly


Chop the tomatoes roughly and add to a bowl with the juice of 2 [4] lime quarters

Season with salt and pepper, add a drizzle of olive oil and give everything a good mix up – this is your speedy salsa

Chop the remaining lime quarters in half


Combine the chipotle paste (can't handle the heat? Go easy!) with the mayonnaise, a drizzle of olive oil and 1 tsp [2 tsp] cold water – this is your chipotle mayo


Add the tortillas to a plate

Put the plate in the microwave and cook for 1-2 min, or until warmed through

Once the fish is cooked, break it apart into bite-sized pieces with a wooden spoon – these are your spiced basa chunks
