Before you begin...

Get all your ingredients and equipment ready

Skim through these steps

Wash your fruit and veg

Note: Equipment and pan sizes vary. Ensure you cook food thoroughly (even if it takes you a little longer than 10 mins)

2 Ten-Min Prawn & Courgette Noodle Soup

Now, let's get started!

Boil a full kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-low heat

Top, tail and cut the courgette[s] in half, then slice finely

3 Ten-Min Prawn & Courgette Noodle Soup

Once hot, add the red curry paste, ginger paste, ground turmeric and dried chilli flakes (can't handle the heat? Go easy!) to the pan and cook for 30 sec

4 Ten-Min Prawn & Courgette Noodle Soup

Remove the coconut cream from the sachet[s] and chop it roughly

Add the coconut cream to the pan with 450ml [850ml] boiled water, give everything a good mix up and bring to the boil over a high heat

5 Ten-Min Prawn & Courgette Noodle Soup

Meanwhile, add the fine egg noodles to a large bowl, cover them with boiled water until fully submerged and stir for 10 sec until the noodles separate

Set aside to soak for 4 min, or until softened

6 Ten-Min Prawn & Courgette Noodle Soup

Add the chopped courgette and king prawns to the pan with the soy sauce, the juice of 1/2 [1] lime and 1 tsp [2 tsp] sugar

Cook for 3-4 min or until the courgette is tender with a bite and the prawns are cooked through 

Note: Please ensure you cook your prawns thoroughly (until piping hot!) as cooking equipment varies

While the prawns are cooking, cut the remaining lime into wedges

Drain the softened noodles
