You'll have this noodle soup on the table in minutes. While the egg noodles soak, you'll make a speedy, punchy broth packed with courgette and coconut cream to cool it all down. Soak, simmer, done!

Note: Equipment and pan sizes vary. Ensure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let's get started!
Boil a full kettle
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-low heat
Top, tail and cut the courgette[s] in half, then slice finely
Once hot, add the red curry paste, ginger paste, ground turmeric and dried chilli flakes (can't handle the heat? Go easy!) to the pan and cook for 30 sec
Remove the coconut cream from the sachet[s] and chop it roughly
Add the coconut cream to the pan with 450ml [850ml] boiled water, give everything a good mix up and bring to the boil over a high heat
Meanwhile, add the fine egg noodles to a large bowl, cover them with boiled water until fully submerged and stir for 10 sec until the noodles separate
Set aside to soak for 4 min, or until softened
Add the chopped courgette and king prawns to the pan with the soy sauce, the juice of 1/2  lime and 1 tsp [2 tsp] sugar
Cook for 3-4 min or until the courgette is tender with a bite and the prawns are cooked through
Note: Please ensure you cook your prawns thoroughly (until piping hot!) as cooking equipment varies
While the prawns are cooking, cut the remaining lime into wedges
Drain the softened noodles
Set the drained noodles and prawn & courgette soup in the centre of the table, ready to share
Garnish with the lime wedges and let everyone dig in
