Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let's get started!
Boil a kettle
Separate the white crab meat from the brown crab meat with a spoon (you’ll use the white meat at the end)
Season the white meat with a pinch of salt and set aside
Add the fine egg noodle nests to a large bowl, cover them with boiled water (save some boiled water for step 5 or re-boil a kettle) and stir for 10 secs to separate the noodles
Set aside to soak for 4 min
Meanwhile, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat
Once hot, add the brown crab meat and roasted garlic paste with half the chilli flakes (can't handle the heat? Go easy!) and cook for 30 secs
Add the soy sauce, toasted sesame oil with the juice of 1/2 [1] lime and a generous pinch of sugar and cook for 30 secs further
Reduce the heat to low – this is your crab sauce
Add the shredded kale to a colander over the sink
Pour the remaining boiled water all over until bright green and wilted
Drain the soaked noodles and add them to the crab sauce with the wilted kale
Give everything a good mix up until fully combined - these are your chilli crab noodles
Tip: Add a splash of the starchy noodle water if your sauce is looking a little dry
Cut the remaining lime into wedges
Snip the coriander roughly with scissors
Set the chilli crab noodles on the table, ready to share
Top with the white crab meat
Garnish with the lime wedges, coriander and remaining chilli flakes (not a fan of spice? Just add a little) and let everyone dig in
