Boil a full kettle

Add the wholewheat noodles to a pot and cover them with boiled water until fully submerged and bring to the boil over a high heat and cook for 5-7 min until tender with a slight bite

Once done, drain and return to the pot and add the toasted sesame oil, give everything a good mix up and set aside until serving - these are your sesame noodles

Meanwhile, zest 1/2 [1] orange (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter)

Cut the orange[s] in half

Peel (scrape the skin off with a teaspoon) and grate the ginger

Peel and grate the garlic

Combine the juice of the orange[s], grated ginger, grated garlic and soy sauce with 1/2 tbsp [1 tbsp] vegetable oil in a small bowl – this is your orange & ginger dressing

Heat a large, wide-based pan (preferably non-stick) with 1/2 tbsp [1 tbsp] vegetable oil over a medium-high heat

Once hot, add the chicken breast strips with a pinch of salt and cook for 3-4 min or until browned

Once browned, add 1/3 of the orange & ginger dressing and cook for a further 4-5 min or until the chicken is cooked through (no pink meat!) and coated in a sticky sauce - this is your orange & ginger chicken

Add the orange zest to the remaining dressing

Whilst the chicken is cooking, top, tail and peel the carrot[s], then continue to peel lengths until you end up with a pile of carrot ribbons

Chop the root[s] from the little gem lettuce[s] and separate the leaves

Slice the radishes as finely as you can

Cut the sugar snap peas in half, lengthways
