Maffe is a popular West African street food dish, commonly known as 'groundnut stew'. It has a tomato base which is thickened and flavoured with nuts, here in the form of peanut butter and ground almonds. We've used the warm spice blend ras el hanout with chicken and sweet potatoes to produce a stew that mimics a slow cook, but ready in no time!

Cooking Instructions
Instructions for 2 people (double for 4)
1 West African One Pot Chicken Maffe

Peel and finely slice the red onion[s]

Heat a large, wide-based pan (preferably non-stick) with a matching lid, with a drizzle of vegetable oil over a medium heat

Once hot, add the sliced onion with a pinch of salt and cook for 6 min or until beginning to soften

2 West African One Pot Chicken Maffe

Chop the sweet potatoes (skins on) into small bite-sized pieces 

Cut the chicken thigh fillets into bite-sized pieces

 

3 West African One Pot Chicken Maffe

Add the chopped chicken and sweet potato to a large bowl with the ras el hanout and a drizzle of vegetable oil

Give everything a good old mix up until everything's coated in the spices

Boil a kettle 

4 West African One Pot Chicken Maffe

Once the onion has softened, add the sweet potato and chicken to the pan and cook, covered, for 5 min, turning everything once halfway

Meanwhile, dice the tomatoes

Add the diced tomatoes to a measuring jug with the chicken stock cube[s], tomato paste and 300ml [600ml] boiled water and mix to combine - this is your tomato stock

5 West African One Pot Chicken Maffe

Add the tomato stock to the pan, stir to combine and cover with a lid

Cook for a further 6-8 min, or until the sweet potatoes are tender and the chicken is cooked through

 

6 West African One Pot Chicken Maffe

Meanwhile, chop the coriander finely, including the stalks (save some leaves for garnish!)

Combine the peanut butter with a small splash of boiled water until it's loosened to a paste

7 West African One Pot Chicken Maffe

Once the sweet potatoes are tender, add the peanut butter and ground almonds to the pan (save a couple of pinches for garnish!) and stir thoroughly for 1 min until the sauce has thickened

Remove from the heat and stir through the chopped coriander – this is your Chicken Maffe
