Cooking Instructions

1 West African-Style Chicken Maffe With Brown Rice

Peel and finely slice the red onion[s]

Heat a large, wide-based pan (preferably non-stick) with a matching lid, with a drizzle of vegetable oil over a medium heat

Once hot, add the sliced onion with a pinch of salt and cook for 6 min or until beginning to soften

2 West African-Style Chicken Maffe With Brown Rice

Meanwhile, rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 15-20 min or until it's tender with a slight bite, then drain and return it to the pot (keep covered until serving)

Meanwhile, chop the sweet potato[es] (skins on) into small bite-sized pieces 

Cut the chicken thighs into bite-sized pieces

 

3 West African-Style Chicken Maffe With Brown Rice

Add the chopped chicken and sweet potato to a large bowl with the ras el hanout and a drizzle of vegetable oil

Give everything a good old mix up until everything's coated in the spices

Boil a kettle 

4 West African-Style Chicken Maffe With Brown Rice

Once the onion has softened, add the sweet potato and chicken to the pan and cook, covered, for 5 min, turning everything once halfway

Meanwhile, dice the tomatoes

Add the diced tomatoes to a measuring jug with the chicken stock cube[s], tomato paste and 300ml [600ml] boiled water and mix to combine – this is your tomato stock

5 West African-Style Chicken Maffe With Brown Rice

Add the tomato stock to the pan, stir to combine and cover with a lid

Cook for a further 6-8 min, or until the sweet potatoes are tender and the chicken is cooked through

 

6 West African-Style Chicken Maffe With Brown Rice

Meanwhile, chop the coriander finely, including the stalks (save some leaves for garnish!)

Combine the peanut butter with a small splash of boiled water until it's loosened to a paste

7 West African-Style Chicken Maffe With Brown Rice

Once the sweet potatoes are tender, add the peanut butter and ground almonds to the pan (save a couple of pinches for garnish!) and stir thoroughly for 1 min until the sauce has thickened

Remove from the heat and stir through the chopped coriander – this is your Chicken Maffe
