Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6
Put a large baking tray (or two!) in the oven to heat up (this will stop the pizza bottoms from going soggy!)
Meanwhile, cut the green pepper[s] in half (scrape the seeds and pith out with a teaspoon), then slice finely
Peel and finely chop (or grate) the garlic
Slice the chicken breast fillets into thin strips
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Once hot, add the sliced chicken breast and sliced green peppers with the curry powder, half the dried chilli flakes (can't handle the heat? Go easy!), ground paprika, turmeric and a pinch of salt
Cook for 5-6 min or until the chicken is cooked through (no pink meat!)
Meanwhile, add most of the chopped garlic (save the rest for later!) to a bowl with the tomato paste, remaining dried chilli flakes (not a fan of spice? Try a small amount first) and a pinch of salt, sugar and pepper
Add 5 tbsp [10 tbsp] water and give it a good mix up – this is your pizza sauce
Drain and pat the mozzarella with kitchen paper (squeeze as much liquid out as you can!)
Tear the drained mozzarella into rough, bite-sized pieces
Remove the heated tray[s] from the oven and add the pizza bases
Divide the pizza sauce between the pizza bases and spread it evenly all over them
Top the pizzas with the cooked chicken and peppers
Next, top the pizzas with the torn mozzarella and then put the tray[s] into the oven for 13-15 min or until the cheese has melted and the bases are crispy
This is your tandoori chicken pizza
While the pizzas are cooking, combine the remaining chopped garlic with the mayonnaise, dried oregano, 1 tbsp [2 tbsp] cold water and 1 tbsp [2 tbsp] olive oil - this is your garlic and herb dip
Serve the tandoori chicken pizza with the garlic and herb dip to the side
Season with a good grind of black pepper
