Cooking Instructions
Instructions for 2 people (double for 4)
1 Sweet & Sour Chicken With Sesame Noodles

Boil a kettle

Cut the chicken breast[s] into thin strips

Combine the honey, 2 tsp [4 tsp] of sugar, tamarind and soy sauce in a mixing bowl this is your marinade

Divide the marinade into 2 separate bowls

Add the chicken strips to one bowl of the marinade and give everything a good mix up

 

2 Sweet & Sour Chicken With Sesame Noodles

In a large bowl, cover the Thai rice noodles with boiled water and set aside for 15 min to soften

Tip: give them a stir with a fork after 5 min to stop them sticking together!

3 Sweet & Sour Chicken With Sesame Noodles

Peel and finely chop (or grate) the garlic

Chop the coriander finely, including the stalks (keep the leaves and stalks separate!)

Peel (scrape the skin off with a teaspoon) and finely grate the ginger

Trim, then slice the spring onions

Cut the red chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and finely chop

4 Sweet & Sour Chicken With Sesame Noodles

Add the cornflour to a plate with 1/2 tsp [1 tsp] of salt and mix to combine

Add the marinated chicken strips to the cornflour and give everything a good mix up until well coated

Tip: you may need to do this in batches!

5 Sweet & Sour Chicken With Sesame Noodles

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a high heat

Once hot, add the chicken and fry for 3 min on each side, or until crispy and cooked through

Once done, transfer the chicken to a plate and set aside this is your sweet & sour chicken

Reserve the pan

6 Sweet & Sour Chicken With Sesame Noodles

Drain the softened noodles

Return the reserved pan to a medium heat with the toasted sesame oil

Once hot, add the shredded spring greens, coriander stalks, grated ginger, chopped garlic and chopped chilli (Can't handle the heat? Go easy!) and cook for 1 min 

7 Sweet & Sour Chicken With Sesame Noodles

Add the remaining marinade and softened noodles to the pan, give everything a good mix and cook for 1 min further until warmed through
