Cooking Instructions
Instructions for 2 people (double for 4)
1 Sweet & Sour Chicken With Rice

Add the basmati rice and 300ml [600ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to low and cook, covered, for 10-12 min or until all the water has been absorbed and the rice is cooked

Remove from the heat and keep covered until serving

Meanwhile, cut the chicken breasts into bite-sized pieces

2 Sweet & Sour Chicken With Rice

Add the chopped chicken to a bowl with the cornflour and mix until the chicken is coated in the flour

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a high heat

Once hot, add the cornflour coated chicken and cook for 6-7 min or until golden and crispy all over, reserving the bowl and any excess cornflour for later – this is your crispy chicken

3 Sweet & Sour Chicken With Rice

While the chicken is cooking, boil half a kettle

Deseed the yellow pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into small pieces

Peel and cut the brown onion[s] into small pieces

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Peel and finely chop the garlic

4 Sweet & Sour Chicken With Rice

Once the chicken has browned, transfer to a plate and set aside for later and return the pan to a medium heat

Add the chopped pepper and onion and cook for 5-6 min or until starting to soften

Once softened, add the chopped garlic and ginger and cook for 1 min or until fragrant

5 Sweet & Sour Chicken With Rice

While the vegetables are cooking, combine 1 tsp [2 tsp] reserved cornflour in a bowl with 100ml [150ml] boiled water

Add half [all] of the tomato ketchup, Chinese rice wine, chilli jam, honey, soy sauce and rice vinegar and mix until smooth – this is your sweet & sour sauce

Tip: Cooking for 2? Save the rest of the ketchup for another recipe!

6 Sweet & Sour Chicken With Rice

Increase the heat to high

Add the sweet & sour sauce and crispy chicken to the pan and cook for 2-3 min further or until a thick sauce remains – this is your sweet & sour chicken

7 Sweet & Sour Chicken With Rice

Trim, then slice the spring onion[s]
