Cooking Instructions
Instructions for 2 people (double for 4)
1 Spanish Chicken & Pepper Stew, Lemon Rice

Chop the chicken breast[s] into large, bite-sized pieces

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Once hot, add the chopped chicken and cook for 3-4 min or until brown on all sides

Once done, transfer to a plate and reserve the pan for later

Meanwhile, peel and slice the red onion[s] finely

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into bite-sized pieces

Chop the lemon[s] into quarters

Return the pan to a medium heat with a drizzle of olive oil

Once hot, add the sliced onion and pepper and cook for 8-10 min or until softened

Once softened, add the smoked paprika and dried oregano and cook for 1-2 min further

Meanwhile, add the basmati rice, 3 [6] lemon quarters and 300ml [600ml] cold water to a pot with a pinch of salt and a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

Boil a kettle

Dissolve 1/2 [1] chicken stock cube, the sun-dried tomato nut pesto and tomato paste in 300ml [500ml] boiled water – this is your pesto stock

Chop the black olives roughly

Return the browned chicken to the softened vegetables with the pesto stock and chopped olives

Cook for 6-8 min further or until the chicken is cooked through (no pink meat!) and the sauce has thickened – this is your Spanish chicken & pepper stew

Meanwhile, peel and grate the garlic

Combine the grated garlic (Don't like raw garlic? Go easy!), juice of the remaining lemon and mayonnaise and give everything a good mix up – this is your garlic aioli
