Cooking Instructions
Instructions for 2 people (double for 4)
1 South Indian Chicken Cashew Curry

Peel and finely slice the red onion[s]

Peel and finely chop (or grate) the garlic

Heat a large, wide-based pan (preferably non-stick with a matching lid), over a medium heat with a drizzle of vegetable oil and a large knob of butter

Once hot, add the onion and garlic with a pinch of salt and cook for 8 min or until softened and browning slightly

Meanwhile, dice the tomatoes

Chop the red chilli[es] (not a fan of spice? Deseed the chilli by scraping the seeds out with a teaspoon)

Chop the coriander finely, including the stalks

Boil a kettle

3 South Indian Chicken Cashew Curry

Add the garam masala, tomato paste, 3/4 of the chopped chilli (can't handle the heat? Go easy!), 3/4 of the coriander and cook for 30 secs

Add the diced tomatoes and cook for a further 30 secs

4 South Indian Chicken Cashew Curry

Dissolve the Knorr chicken stock cube[s] in 300ml [600ml] boiled water

Add the stock to the pan and cook, covered, for 3 min

5 South Indian Chicken Cashew Curry

Cut the chicken breasts into bite-sized pieces

Add the chicken pieces to the pan, reduce the heat to medium-low and cook, covered for 12 min until the chicken is tender and cooked through (no pink meat!)

6 South Indian Chicken Cashew Curry

While the chicken is cooking, add the basmati rice, cardamom pods and 300ml [600ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving – this is your cardamom rice

7 South Indian Chicken Cashew Curry

Add the cashew nuts to a pestle & mortar and bash into a fine powder (or pulse in a food processor)

Add 2 tbsp [4 tbsp] cold water and mix to form a paste

Stir the cashew paste into the curry and cook for 2 min further – this is your South Indian chicken cashew curry
