Cooking Instructions
Instructions for 2 people (double for 4)
1 Pulled Chicken & Wholegrain Mayo Burger

Preheat the oven to 240°C/ 220°C (fan)/ 475°F/ Gas 9

Cut the potatoes (skins on) into chunky wedges and add them to a baking tray, skin-side down (to prevent sticking), with a drizzle of olive oil

Season generously with salt and oven-roast for 25-30 min or until crisp

Heat a large, wide-based pan with a matching lid (or griddle if you have one) over a medium-high heat

Cut the brioche rolls in half

Once hot, add the brioche cut-side down and cook for 3 min or until toasted and charred, then set aside until serving (reserve the pan for the next step)

Return the pan to a high heat

Once hot, add the chicken breast fillet[s] and cook for 3 min on both sides until golden

Add 1 tbsp [2 tbsp] water and cover with a lid (this steams it)

Cook for a further 7 min or until the chicken is cooked through

Tip: your chicken is cooked when the juices run clear

Once cooked, transfer the chicken to a clean chopping board, cover with a tea towel and leave to rest

Meanwhile, combine the wholegrain mustard and mayonnaise with 1 tbsp
[2 tbsp] olive oil - this is your wholegrain mayo

Shred the little gem lettuce

Cut a slice of tomato for each burger

Chop the remaining tomato for the salad

Combine the white wine vinegar with 2 tbsp [4 tbsp] olive oil and salt and pepper in a large mixing bowl- this is your salad dressing

Shred the rested chicken apart, using two forks- this technique is known as ‘pulling’

Once pulled, season generously with salt and pepper

Add the shredded lettuce and chopped tomatoes to the salad dressing bowl and mix to combine
