Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of olive oil over a medium-high heat
Once hot, add the chicken thighs with a pinch of salt and pepper and cook for 3 min on each side or until browned
Boil a kettle
Peel and finely dice the brown onion[s]
Peel and finely chop (or grate) the garlic
Once the chicken thighs have browned, add the chopped onion and garlic and cook for 2-3 min or until beginning to soften
Dissolve the Knorr chicken stock cube[s] in 400ml [700ml] boiled water and 100ml [150ml] milk – this is your stock
Add the orzo pasta to the pan and cook for 1 min
Then add the stock and soft cheese and cook, covered, stirring frequently, for 10-12 min, or until the orzo is cooked with a slight bite
Tip: Stirring the orzo will release the starch from the pasta, making it creamier!
While the orzo is cooking, grate the cheddar cheese
Chop the basil leaves finely
Wash and pat the spinach dry with kitchen paper
Once the orzo is cooked, add the spinach and cook for a further 1-2 min, stirring until wilted
When the chicken is done (no pink meat!), shred it apart in the pan using two forks – this technique is known as ‘pulling’
Give everything a good mix up – this is your creamy chicken & spinach orzo
Serve the creamy chicken & spinach orzo and garnish with the chopped basil and grated cheese
