Cooking Instructions
Instructions for 2 people (double for 4)
1 1351 - One-Pot Comforting Chicken & Squash Casserole

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of olive oil over a medium-high heat

Once hot, add the chicken thighs with a pinch of salt and cook for 2 min on each side or until golden, then transfer the chicken to a plate, set aside and reserve the pan

While the chicken is cooking, peel and finely slice the brown onion[s]

Peel and finely chop (or grate) the garlic

Dissolve the Knorr chicken stock cube[s] in 450ml [800ml] boiled water

Return the pan to a medium heat with a knob of butter

Once melted, add the sliced onion with a pinch of salt and cook for 3-4 min or until softened

Add 1 tbsp [2 tbsp] flour and cook for 2-3 min further

Meanwhile, cut the waxy potatoes into large bite-sized pieces

Strip the thyme leaves from their stems and chop them roughly, discard the stems (save some whole leaves for garnish!)

Once the onion has softened, add the chopped thyme and chopped garlic and cook for 1 min

Add the chicken stock and bring to the boil over a high heat

Return the chicken to the pan and add the chopped potatoes and butternut squash cubes

Once boiling, reduce the heat to medium and cook, covered, for 10-15 min or until everything is tender and cooked through

Once the potatoes are nearly done, cut the ciabatta[s] in half and add them to a baking tray

Put the tray in the oven for 2-3 min or until they're golden and crisp

Once cooked, remove the chicken thighs from the pan and transfer to a clean board and shred it apart, using two forks - this technique is known as ‘pulling’

Once everything is tender, add the clotted cream to the pan with the juice of 1/2 [1] lemon and season with a very generous pinch of pepper

Return the pulled chicken to the pan and give everything a good mix up – this is your chicken & squash casserole
