Cooking Instructions
Instructions for 2 people (double for 4)
1 Moroccan Lemon & Apricot Chicken Tagine

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6

Boil a kettle

Add the couscous to a heatproof bowl with 200ml [400ml] boiled water, cover and set aside

2 Moroccan Chicken, Apricot & Lemon Tagine

Meanwhile, add the flaked almonds to a baking tray and put them in the oven for 5 min or until they've darkened slightly in colour (toasted)

Once toasted, set them aside to cool

3 Moroccan Lemon & Apricot Chicken Tagine

Meanwhile, peel and finely slice the brown onion[s]

Peel and finely chop (or grate) the garlic

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Set the diced apricots aside

4 Moroccan Lemon & Apricot Chicken Tagine

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of olive oil over a medium-high heat

Once hot, add the sliced onion with a pinch of salt and cook for 5 min or until softened

Meanwhile, re-boil a kettle

 

5 Moroccan Lemon & Apricot Chicken Tagine

Chop the tomatoes into wedges, then cut each wedge in half

Dissolve the chicken stock cube[s] in 250ml [500ml] boiled water

Slice the chicken thighs into strips

6 Moroccan Lemon & Apricot Chicken Tagine

Once the onion has softened, add the ras el hanout, chilli flakes (Can't handle the heat? Go easy!), chopped ginger, garlic and apricots and cook for 2 min

Add the chicken strips and cook for 2 min further

Add the chopped tomatoes, chicken stock, black olives and the juice of 1/2 [1] lemon and cook, covered, for 8-10 min or until the chicken is cooked through (no pink meat!)

 

7 Moroccan Lemon & Apricot Chicken Tagine

Meanwhile, chop the parsley finely, including the stalks

Fluff the couscous with a fork and squeeze in the juice of the remaining lemon

Add a drizzle of olive oil, a generous pinch of salt and half the chopped parsley and mix to combine – this is your herby couscous

Stir the remaining chopped parsley through the tagine
