Cooking Instructions
Instructions for 2 people (double for 4)
1 Miso-Butter Asparagus & Chicken Noodles

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips

Trim the very ends off the asparagus spears

Slice the asparagus in half, lengthways

2 Miso-Butter Asparagus & Chicken Noodles

Boil a kettle 

Heat a large, wide-based dry pan (preferably non-stick), with a matching lid, over a high heat 

Once very hot, add the sliced red pepper and sliced asparagus

Cook for 5-8 min or until slightly charred (this gives a smoky flavour)

Meanwhile, trim, then slice the spring onion[s] finely

Separate the spring onion white stems and green tops 

Peel and finely chop (or grate) the garlic

4 Miso-Butter Asparagus & Chicken Noodles

Add the wholewheat noodles to a pot of boiling water with a pinch of salt over a high heat and cook for 5-7 min until the noodles are cooked with a slight bite

Once cooked, drain and return to the pot, drizzle over the toasted sesame oil, mix through and set aside

5 Miso-Butter Asparagus & Chicken Noodles

Meanwhile, combine the miso paste with 2 tbsp [4 tbsp] boiled water and 2 tsp [4 tsp] sugar (or honey if you prefer) and mix until you get a smooth paste 

Melt 2 tbsp [4 tbsp] butter in a small pot over a low heat

Once melted, add the butter to the miso mixture and whisk to combine - this is your miso butter 

6 Miso-Butter Asparagus & Chicken Noodles

Add a drizzle of vegetable oil to the pan with the charred asparagus and pepper and add the diced chicken

Cover with a lid and cook for 4-5 min or until the chicken is cooked 

 

7 Miso-Butter Asparagus & Chicken Noodles

Once cooked, add a splash of water to the pan, along with the whites of the spring onion, the chopped garlic and half of the miso butter

Cover and cook for 1 min further, then remove from the heat
