Cooking Instructions
Instructions for 2 people (double for 4)
1 Mild Chicken Korma

Boil a kettle

Crush the cardamom pods open by squashing them with a knife

Heat a pot, with a matching lid, with a large knob of butter over a medium heat

Once hot, add the split cardamom pods and cook for 30 secs or until they're fragrant

2 Mild Chicken Korma

Add the basmati ricesultanas and a pinch of salt and cook for a further 1 min, then add 350ml [750ml] boiled water and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has been absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

3 Mild Chicken Korma

Meanwhile, peel and finely dice the brown onion[s]

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Peel and finely chop (or grate) the garlic

4 Mild Chicken Korma

Heat a large, wide-based pan (preferably non-stick) with a large knob of butter over a medium heat

Once hot, add the diced onion and a generous pinch of salt and cook for 3-5 min or until softened

Once softened, add the Korma curry powderchopped garlic and ginger and cook for 1 min further

5 Mild Chicken Korma

Meanwhile, chop the chicken thighs into bite-sized pieces

Dissolve the chicken stock cube[s] in 150ml [200ml] boiled water - this is your chicken stock

Chop the coriander finely, including the stalks

6 Mild Chicken Korma

Add the chopped chicken to the pan and cook over a medium heat for 2-3 min or until it's browned

7 Mild Chicken Korma

Once the chicken is browned, add the chicken stock and ground almonds to the pan and cook for a further 2-3 min or until the chicken is cooked through (no pink meat!)

Once done, stir in the Greek-style yoghurt and cook for a further 1 min or until it's warmed through – this is your mild chicken korma
