This Mexican-inspired dish combines pulled smoky chicken breast with fluffy coriander rice. You'll bake corn on the cob in plenty of butter, then top with salty feta and fiery chilli flakes and serve it to the side. All finished with a drizzle of zingy lime mayo! Cooking Instructions
Instructions for 2 people (double for 4)
1 Mexican Pulled Chicken & Fiery Feta Corn

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Remove the husk[s] (and any silk!) from the corn on the cob[s]

Add the corn on the cob[s] to a large piece of tin foil and top with a large knob of butter

Scrunch the foil around the corn until tightly sealed and add to a baking tray

Put the tray in the oven for 25-30 min or until the corn is cooked

While the corn is in the oven, add the basmati rice and 300ml [600ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has been absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

Meanwhile, chop the coriander finely, including the stalks

Combine the mayonnaise with the juice of 1/2 [1] lime – this is your lime mayo

Cut the remaining lime into wedges

Crumble the feta cheese

Set everything aside for serving

4 Mexican Pulled Chicken & Fiery Feta Corn

Place your hand flat onto the chicken breast[s]

Slice in half as if you were cutting a burger bun, so you are left with 2 [4] thinner pieces

Add the ground cumin, smoked paprika, ground coriander and half the chilli flakes (can't handle the heat? Go easy!) to a plate with a generous pinch of salt and pepper and give everything a good mix up

Add the chicken pieces to the plate and turn them several times until fully coated in all the spices

6 Mexican Pulled Chicken & Fiery Feta Corn

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a medium-high heat heat

Once hot, add the chicken to the pan and cook for 2 min on each side

Add the tomato paste with 100ml [200ml] cold water, give everything a good mix up and cook, covered, for 8-10 min or until the chicken is cooked through (no pink meat!)

7 Mexican Pulled Chicken & Fiery Feta Corn

Once the chicken is cooked, transfer it to a board and shred it apart using two forks – this technique is known as 'pulling'

Return the shredded chicken to the pan with the sauce and stir it all together

Stir most of the chopped coriander through the rice – this is your coriander rice

Carefully remove the corn on the cob[s] from the tin foil and cut in half
