Cooking Instructions
Instructions for 2 people (double for 4)
1 Mexican Chilli Chicken Torta, Paprika Fries

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6 

Boil a kettle

Cut the potatoes (skins on) into fries

Add the fries to a baking tray with a drizzle of vegetable oil, a pinch of salt and the smoked paprika and give everything a good mix up

Put the tray in the oven for 25-30 min or until golden and crispy

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips

Heat a large, wide-based pan (preferably non-stick) with a matching lid with a drizzle of vegetable oil over a medium-high heat

Once hot, add the sliced red pepper and cook for 2-3 min or until slightly charred

Meanwhile, add the ground cumin, ground coriander, dried oregano and a generous pinch of salt and pepper to a plate

Give everything a good old mix up and add the chicken thigh fillets

Turn the chicken thighs several times until they're fully coated in all the spices

Once slightly charred, transfer the peppers to a plate 

Return the pan to to a medium heat

Once hot, add the chicken thighs and cook for 2-3 min on each side or until browned

Meanwhile, dissolve the tomato paste and chipotle paste (Can't handle the heat? Go easy!) in 150ml [250ml] boiled water 

Once the chicken has browned, return the charred peppers to the pan with the stock and season with a pinch of salt

Cook, covered, for 8-10 min or until the chicken is cooked through

Meanwhile, dice the tomato[es]

Shred the little gem lettuce[s]

Cut the lime[s] in half

Combine the juice of 1/2 [1] lime with 1 tbsp [2 tbsp] olive oil and a pinch of salt in a large bowl – this is your lime dressing

Put the ciabatta rolls in the oven for 2-3 min or until warmed through

Meanwhile, transfer the cooked chicken to a clean board and shred it apart, using two forks – this technique is known as ‘pulling’

Return the shredded chicken to the pan and squeeze in the juice of the remaining lime 

Add the shredded lettuce and diced tomato to the lime dressing and mix to combine
