Cooking Instructions
Instructions for 2 people (double for 4)
1 Honey Saffron Chicken

Boil a kettle

Dissolve half the [a whole] stock cube with 200ml [400ml] boiled water in a bowl

Add the couscous to the stock and cover 

Set aside 

2 Honey Saffron Chicken

Meanwhile, add the chicken to a bowl with the cumin and 1-2 tbsp olive oil

Season with salt and pepper

Mix well and set aside

3 Honey Saffron Chicken

Meanwhile, cut the top and the bottom off the orange[s] 

Cut the skin away from the flesh

Discard the skin, keeping the peeled fruit 

Tip: take care to remove all the pith as it has a bitter taste

4 Honey Saffron Chicken

Cut in-between the membranes to remove the segments over a bowl

Chop the segments into bite-size pieces

Squeeze the membrane flesh of all its juice into the bowl and add any juice from the chopping board as well

5 Honey Saffron Chicken

Combine the juice of the orange with the saffron and honey

6 Honey Saffron Chicken

Heat 1-2 tbsp olive oil in a large pan (preferably non-stick) over a medium-high heat

Once hot, add the chicken and cook for 4-6 min or until cooked through

Once cooked, remove the chicken from the heat and cool slightly, then pour over half of the saffron dressing and half of the sesame seeds

7 Honey Saffron Chicken

Chop the mint leaves and the spring onion[s] finely, discarding the root end[s]

Fluff the couscous, add the chopped orange, mint, half the spring onion[s] and the remaining saffron dressing

Dress with a little extra olive oil if desired and season with salt and pepper
