The beauty of cooking chicken this way (en papillote, meaning in a closed parcel) is that the sweet honey mustard juices you're left with act as a warm dressing for your salad. A simple side of seasonal fine green beans (or whichever green bean is best at the time) & potatoes sit alongside, creating a French inspired mid-week meal.

Cooking Instructions
Instructions for 2 people (double for 4)
1  Honey Mustard Chicken

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the waxy potatoes (skins on) into wedges

Cut the green beans in half

Boil a kettle

2  Honey Mustard Chicken

Combine the honey and wholegrain mustard in a large bowl and season generously with salt and pepper

Cut each chicken thigh fillet in half 

Add the chicken to the honey mustard mixture and give everything a good old mix up 

3  Honey Mustard Chicken

Heat a large, wide-based pan (preferably non-stick) over a medium-high heat

Once hot, add the chicken, shaking any excess honey mustard back into the bowl

Cook the chicken on each side for 1-2 min, or until browned and starting to char and blacken 

4  Honey Mustard Chicken

Meanwhile, cut out 2 large sheets of tin foil and layer them over each other 

Tip: doubling up prevents leakages!

Lay the browned chicken in the middle of the foil

Pour the excess honey mustard mixture all over the chicken

5  Honey Mustard Chicken

Scrunch the edges of the tin foil together to form a sealed parcel

Place the tray in the oven for 15-20 min or until the chicken is cooked through

Meanwhile, trim then slice the spring onion[s] finely

6  Honey Mustard Chicken

Add the potatoes to a pot of salted boiled water, bring it to the boil over a high heat and cook the potatoes for 8-12 min or until fork-tender

Add the green beans to the potatoes for the last 5 min of cooking time until tender

Once done, drain and dress them with the apple cider vinegar, a drizzle of olive oil and the spring onion

Season generously with salt and pepper

7  Honey Mustard Chicken

Wash and pat the lambs lettuce dry and place it in a large mixing bowl

Transfer the cooked chicken to serving plates

Dress the lettuce with half of the warm honey mustard mixture
