This quick and flavoursome meal is inspired by a famous Thai street food dish called Pad Krapow Gai. You'll stir-fry chicken with crushed chilli and garlic in a sweet and savoury sauce, serve it with lemongrass rice and then top the lot with a striking sesame fried egg. Bash the lemongrass with a rolling pin
Add the basmati rice, bashed lemongrass and 350ml [700ml] cold water to a pot with a lid and bring to the boil over a high heat
Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked, then remove from the heat and cover until serving
Meanwhile, peel and finely slice the shallot[s]
Chop the red chilli[es] roughly
Peel the garlic
Add the garlic and chopped chilli (can't handle the heat? Go easy!) to a pestle & mortar and bash until crushed into small rough pieces
Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a medium-low heat
Once hot, add the black and white sesame seeds, crack the eggs into the pan and cook, covered, for 2 min or until done to your liking – this is your sesame fried egg
Meanwhile, cut the chicken breast[s] into very small bite-sized pieces
Transfer the cooked eggs to a plate and cover to keep warm
Reserve the pan
Return the pan to a medium-high heat
Once hot, add the sliced shallot with the bashed garlic and chopped chilli (can't handle the heat? Go easy!)
Cook for 1 min or until fragrant
Add the chopped chicken and cook for a further 1 min
Add the hoisin sauce, fish sauce, soy sauce, 1/2 tbsp [1 tbsp] sugar and 1 tbsp [2 tbsp] water
Cook for 1-2 min or until the sauce begins to reduce and the chicken is cooked through (no pink meat!)
Once done, remove the pan from the heat
Pick the basil leaves from their stalks, discard the stalks
Add the basil leaves to the chicken and give everything a good old mix up – this is your Thai basil chicken
Serve the Thai basil chicken over the lemongrass rice
Top with a sesame fried egg
