Cooking Instructions
Instructions for 2 people (double for 4)
1 Crispy Hoisin Chicken, Orange & Noodle Salad

Pull the chicken skin off the chicken thighs 

Season the chicken skin generously with salt

Heat a wide-based pan (preferably non-stick with a matching lid) over a medium-low heat 

Once hot, add the chicken skin and fry for 6-8 min or until golden, crispy and cooked through (no pink meat!) 

Tip: Weigh the chicken skin-side down with a second, smaller pan to make it even crispier

Boil a kettle

While the chicken skin is cooking, add the fine egg noodles to a large heatproof bowl and cover them with boiled water until they're fully submerged 

Set aside for 15 min or until the noodles have softened and are tender

Once done, drain the noodles and run under cold water until cool

Once crispy, transfer the chicken skin to some kitchen paper and set aside 

Drain any excess oil from the pan and return it to a medium heat 

Once hot, add the chicken thighs to the pan and cook for 2 min on each side until golden

Once golden, add a couple of splashes of water to the pan and cook, covered, for 10-12 min 

5 Crispy Hoisin Chicken, Orange & Noodle Salad

Meanwhile, cut the red chilli[es] in half lengthways, deseed and chop finely

Zest a little of the orange[s] (grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as it's very bitter!)

Combine the rice vinegar, orange zestsesame oil, chopped chilli (can't handle the heat? Go easy!) and a pinch of salt and pepper – this is your dressing 

6 Crispy Hoisin Chicken, Orange & Noodle Salad

Slice the cucumber into discs before slicing each individual cucumber disc into matchsticks 

Trim the spring onions and slice them lengthways until you have thin strips

Cut the skin from the orange[s], removing all the white pith, then cut between the membranes to slice the orange into segments

Toss the orange, cucumber, spring onion and noodles in the dressing

This is your orange & noodle salad

Once the chicken is cooked, transfer it to a clean board and shred it apart, using two forks – this technique is known as ‘pulling'

Return the chicken to the pan with the hoisin sauce and the soy sauce and cook for 2 min or until warmed through
