A nation's favourite has come home to roost! Originally invented for the Queen's Coronation, Coronation chicken is now an established part of British cuisine. We've reinvented this regal dish by serving juicy shredded chicken breast in a curried mango and yoghurt sauce over a zingy green salad with mini coriander naans on the side. Royally good!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Coronation Chicken Salad & Baby Naan

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6

Heat a large, wide-based pan (preferably non-stick) with a matching lid, with a drizzle of vegetable oil over a medium-high heat

Once hot, add the chicken breast[s] and cook for 3 min on each side until golden

 

2 Coronation Chicken Salad & Baby Naan

Once golden, add a knob of butter, the curry powder and a pinch of salt to the pan and cook for 1 min further

Reduce the heat to medium-low, add a few splashes of water and the sultanas and cook, covered, for 10-15 min or until the chicken is cooked through

3 Coronation Chicken Salad & Baby Naan

Meanwhile, peel and finely chop (or grate) the garlic

Cut the cucumber in half and slice into half disks 

Trim, then slice the spring onion[s] finely

Roll the lime[s] with your hand on a hard surface (to release more juice!) and cut in half

 

4 Coronation Chicken Salad & Baby Naan

Combine the chopped garlic (don't like raw garlic? Go easy!), mustard seeds and a generous drizzle of olive oil in a large bowl

Juice the lime into the bowl and season with salt and pepper - this is your lime & mustard seed dressing 

5 Coronation Chicken Salad & Baby Naan

Pop the mini coriander naans in the oven for 3-4 min or until warmed through

6 Coronation Chicken Salad & Baby Naan

Once the chicken is cooked, remove the pan from the heat and shred the chicken apart in the pan, using two forks - this technique is known as ‘pulling’

Once pulled, add the natural yoghurt and mango chutney to the pan and give everything a good mix up - this is your Coronation chicken 

7 Coronation Chicken Salad & Baby Naan

Toss the baby leaf salad and sliced cucumber in the lime & mustard seed dressing and divide between 2 [4] plates
