You'll coat the chicken in cornflour, before frying it to get a crispy coating, then make a lemon sauce using fresh ginger, lemon and honey. Tenderstem and green beans are cooked in a foil parcel, leaving you with perfectly cooked greens!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Chinese Lemon Chicken & Tenderstem

Preheat the oven to 200°C/ 180°C (fan)/ 350°F/ Gas 4

Add the basmati rice and 250ml [500ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked, then remove from the heat and keep covered until serving

2 Chinese Lemon Chicken & Tenderstem

Meanwhile, cut 2 large pieces of tin foil and lay the green beans and Tenderstem broccoli in the middle of them (doubling up prevents leakages!)

Add the soy sauce and scrunch the edges of the foil up to form a tightly sealed parcel

Put the parcel on a baking tray and put the tray in the oven for 10-15 min or until cooked

3 Chinese Lemon Chicken & Tenderstem

Meanwhile, peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Cut 1/2 [1] lemon into thin slices and juice 1/2 [1] lemon into a bowl 

Add the honey, 1 tsp [2 tsp] of the cornflour, a pinch of salt and 100ml [200ml] cold water - and give the sauce a very good mix - this is your lemon sauce

4 Chinese Lemon Chicken & Tenderstem

Cut the chicken breast[s] lengthways into 4 [8] strips, then cut each strip in half

Add the cornflour to a large bowl with a generous pinch of salt

Add the chicken strips and give everything a good old mix up so that they're fully coated in the cornflour 

5 Chinese Lemon Chicken & Tenderstem

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a high heat

Once hot, add the cornfloured chicken and cook for 3-4 min on each side or until crispy and cooked through

Once cooked, transfer the crispy chicken to a plate and season with a pinch of salt

Wipe the pan clean and keep it for later

 

6 Chinese Lemon Chicken & Tenderstem

Meanwhile, trim, then slice the spring onions finely

Cut the red chilli[es] in half lengthways, de-seed (scrape the seeds out with a teaspoon) and chop finely

Stir the sliced spring onions and chopped chilli (can't handle the heat? Go easy!) into the cooked rice

Season with a pinch of salt - this is your chilli rice

 

7 Chinese Lemon Chicken & Tenderstem

Return the pan to a medium low heat

Once hot, add the chopped ginger and cook for 1 min

Add the lemon slices and lemon sauce and cook for 2-3 min or until the sauce is thick and sticky
