Instructions for 2 people (double for 4)
1 Chicken Teriyaki With Sugar Snap Peas

Add the basmati rice and 350ml [700ml] water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked, then remove from the heat and keep covered until serving

2 Chicken Teriyaki With Sugar Snap Peas

Meanwhile, slice the chicken thigh fillets into thin strips

Heat a large pan (preferably non-stick) with a matching lid, with 1-2 tbsp vegetable oil over a medium heat

Once hot, add the chicken and cook for 3 min or until starting to brown

Add 100ml [200ml] water and cook, covered, for a further 5 min

Meanwhile, peel the ginger (scrape the skin off with a teaspoon) and finely chop (or grate)

Zest the lime[s]

Roll the lime[s] with your hand on a hard surface (to release more juice!) and cut them in half

4 Chicken Teriyaki With Sugar Snap Peas

Combine the chopped ginger, lime zest, lime juice, chilli flakes (can't handle the heat? Go easy), toasted sesame oil, soy sauce and 2 tbsp [4 tbsp] sugar (preferably brown)

Mix well - this is your teriyaki sauce

5 Chicken Teriyaki With Sugar Snap Peas

Once the rice is done, add the sugar snap peas to the same pot (over the rice) and put the lid back on, this steams them

Cook them for 3 min or until the peas are hot and tender but with a slight crunch

6 Chicken Teriyaki With Sugar Snap Peas

Add the teriyaki sauce to the chicken and mix through

Cook for 2 min or until the sauce has reduced to a sticky consistency - this is your teriyaki chicken

Meanwhile, chop the spring onion[s] finely, discarding the root end[s]

Remove the cooked, teriyaki chicken from the heat and add the toasted sesame seeds
