Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

Cut the potatoes (skins on) into small bite-sized pieces

2 Chicken & Sun-Dried Tomato Sauce With Basil

Add the sun-dried tomatoes to a bowl, cover them with 200ml [400ml] boiled water and set them aside to soak

Crush the garlic cloves by pressing them down with the side of a knife (skins on!)

Strip the rosemary leaves from their stems, discard the stems

Add the chicken breast[s] to a baking tray with the potatoes, crushed garlic and rosemary

Season everything with a pinch of salt and pepper, drizzle with vegetable oil and give everything a good mix up

Put the tray in the oven for 30 min or until the potatoes are golden and the chicken is cooked through (no pink meat!)

Meanwhile, re-boil a kettle

5 Chicken & Creamy Sun-Dried Tomato Sauce

Once the chicken has been cooking for 20 min, add the green beans to a pot, cover them with boiled water (just enough to cover them) and a pinch of salt

Bring to the boil over a high heat and cook for 3-4 min or until tender

Once cooked, drain and return them to the pot and cover until serving

6 Chicken & Sun-Dried Tomato Sauce With Crispy Potatoes

While the beans are cooking, trim, then slice the spring onion[s] finely

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium heat

Once hot, add the sliced spring onion and tomato paste and cook for 1 min

Add the soaked sun-dried tomatoes with half of the soaking liquid and 50ml [100ml] boiled water and cook for 2 min further

7 Chicken & Sun-Dried Tomato Sauce With Crispy Potatoes

Stir in the soft cheese and cook for 1-2 min further – this is your sun-dried tomato sauce

Tip: Add a splash of water if the sauce is looking a little dry!
