Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Add the smoked paprika, ground cumin and ground coriander to a bowl with the juice of 1/2 [1] lemon, 2 tbsp [4 tbsp] olive oil and a pinch of salt and pepper
Add the chicken thighs to the bowl and give everything a good mix up
Cut the potatoes (skins on) into chips
Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt
Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp
Peel and finely chop (or grate) the garlic
Add half the garlic (save the rest for later!) to a bowl with the mayonnaise, juice from the remaining lemon, a drizzle of olive oil and a pinch of salt and pepper and mix together – this is your garlic mayo
Line a baking tray with tin foil
Add the chicken thighs to the tray
Add the tray to the oven and cook for 15-20 min or until the chicken is cooked through (no pink meat!)
Cut 1 [2] tomato[es] into wedges
Chop the remaining tomato[es] roughly
Peel and finely slice the red onion[s]
Shred the little gem lettuce[s] finely
Add the roughly chopped tomatoes, half the shredded little gem and half the sliced red onion to a bowl with the red wine vinegar and give everything a good mix up
Once the chicken is done, remove it from the baking tray, cover with tin foil and set aside to rest
Add the pitta breads to the tray
Return the tray to the oven and cook for 2-3 min or until warmed through
Slice the cooked chicken
Cut the pittas in half and fill with the garlic mayo, tomato wedges, sliced chicken, remaining little gem and remaining red onion – these are your chicken sharwama pittas
Serve the chicken sharwama pittas on a plate with the chips and salad to the side
