Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat
Once boiling, reduce the heat to medium and cook for 20-25 min or until it's tender with a slight bite
Boil half a kettle
Peel and finely chop the brown onion[s]
Heat a large, wide-based pan (preferably non-stick with a matching lid) with a large drizzle of vegetable oil over a medium-low heat
Once hot, add the chopped onion and curry powder and cook for 6-7 min or until softened
Meanwhile, dissolve the Knorr chicken stock cube[s], coconut cream and peanut butter in 350ml [650ml] boiled water – this is your peanut stock
Peel and finely chop (or grate) the garlic
Once the onion is softened, add the diced chicken and garlic to the pan and cook for 3 min or until starting to brown
Once lightly browned, add the peanut stock, soy sauce, kaffir lime leaves and 1 tsp [2 tsp] sugar
Cover and cook for 10-12 min or until the chicken is cooked through (no pink meat!)
Once the rice is tender, add the shredded kale to the pot and cook for 3-4 min further
Once done, drain and return it to the pot and keep covered until serving – this is your brown rice & kale
Squeeze in the juice of 1/2 [1] lime to the chicken and slice the remaining lime into wedges
Serve the chicken satay curry next to the brown rice & kale
Garnish with the roasted peanuts and a lime wedge
