Cooking Instructions
Instructions for 2 people (double for 4)
1 Chicken Satay Curry, Kale Brown Rice

Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 20-25 min or until it's tender with a slight bite

 

2 Chicken Satay Curry, Kale Brown Rice

Boil a kettle

Peel and finely chop the brown onion[s]

3 Chicken Satay Curry, Kale Brown Rice

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a large drizzle of vegetable oil over a medium-low heat

Once hot, add the chopped onion and curry powder and cook for 6-7 min or until softened

4 Chicken Satay Curry, Kale Brown Rice

Meanwhile, dissolve the Knorr chicken stock cube[s], coconut cream and peanut butter in 350ml [650ml] boiled water – this is your chicken & nut stock

Peel and finely chop (or grate) the garlic 

Chop the chicken thighs into bite-sized pieces

5 Chicken Satay Curry, Kale Brown Rice

Once the onion is softened, add the chopped chicken and garlic to the pan and cook for 3 min or until starting to brown

Once lightly browned, add the chicken & nut stock, soy sauce, kaffir lime leaves and 1 tsp [2 tsp] sugar 

Cover and cook for 10-12 min or until the chicken is cooked through (no pink meat!)

7 Chicken Satay Curry, Kale Brown Rice

Once the rice is tender, add the kale to the pot and cook for 3-4 min further 

Once done, drain and return it to the pot and keep covered until serving – this is your kale rice
