Cooking Instructions
Instructions for 2 people (double for 4)
1 Chicken Fajitas, Seeded Tortilla Wraps & Salsa

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

(you'll only need the oven to warm your wraps – you could pop them in the microwave if you prefer)

Chop the chicken breast[s] into thin strips 

 

2 Chicken Fajitas, Seeded Tortilla Wraps & Salsa

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips

Peel then slice the red onion[s]

Add the chopped chicken breast, chopped peppers and most of the red onion (you'll use the rest for your salsa) to a large bowl

3 Chicken Fajitas, Seeded Tortilla Wraps & Salsa

Add the smoked paprika, ground cumin, ground coriander, 1 tbsp [2 tbsp] vegetable oil and a generous pinch of salt and give it a good mix up – this is your fajita mix

4 Chicken Fajitas, Seeded Tortilla Wraps & Salsa

Heat a large wide-based pan (preferably non-stick) over a medium-high heat

Once hot, add the fajita mix and cook for 12-15 min or until everything is cooked and tender (no pink meat!)

Tip: if it's starting to stick add a small drizzle of oil

Meanwhile, shred the little gem lettuce

Cut the lime[s] in half 

Dice the tomato[es], then dice the remaining red onion slices

Chop the coriander roughly, including the stalks

Chop the red onion, tomato and coriander together as finely as you can

6 Chicken Fajitas, Seeded Tortilla Wraps & Salsa

Add the diced onion, tomato and coriander to a small bowl, add the juice of 1/2 [1] lime and a pinch of salt – this is your tomato salsa

7 Chicken Fajitas, Seeded Tortilla Wraps & Salsa

Add the wholewheat tortilla wraps to a baking tray

Put them in the oven (or microwave) for 2 min or until they're warmed through

Meanwhile, chop the remaining lime into wedges
