Cooking Instructions
Instructions for 2 people (double for 4)
1 1305 - Chicken & Cashew Massaman Curry

Preheat the oven to 190°C/ 170°C (fan)/ 375°F/ Gas 5

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a medium heat

Once hot, add the chicken thighs with a pinch of salt and pepper and cook for 4-5 min or until browned on both sides

While the chicken is browning, boil a kettle

Peel and chop the red onion[s] into petals

Peel and chop the sweet potato[es] into bite-sized pieces

Chop the green beans in half

Once the chicken thighs have browned, add the red onion petals to the pan and cook for 2-3 min

Add the ground cinnamon and red curry paste and cook for 2 min further or until the chicken is coated in the spices

Meanwhile, remove the coconut cream from the sachet[s] and chop it roughly

Dissolve the chopped coconut creamfish sauce and a pinch of sugar in 350ml [700 ml] boiled water – this is your coconut stock

5 1305 - Chicken & Cashew Massaman Curry

Add the coconut stock, chopped sweet potatoes, star anise and kaffir lime leaves to the pan and cook, covered, for 8-10 min until the sweet potatoes are almost fork tender

Add the chopped green beans and cook for 3-4 min further or until the beans are tender and the chicken is cooked through (no pink meat!)

Season to taste with a pinch of salt and pepper - this is your massaman curry

6 1305 - Chicken & Cashew Massaman Curry

While the curry is cooking, add the basmati rice and 250ml [500ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

7 1305 - Chicken & Cashew Massaman Curry

Crush the cashew nuts with a rolling pin

Tip: Crush them in the bag so you don't lose them!

Add the crushed cashews to a baking tray and put the tray in the oven for 3-4 min or until the cashews are toasted

Once the chicken is cooked, transfer to a clean board and shred it apart using two forks – this technique is known as 'pulling'
