1 Chicken Caesar Salad With Yoghurt Dressing

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Place your hand flat onto the chicken breast fillet[s]

Slice in half as if you were cutting a burger bun, so you are left with two thinner pieces

Peel and chop the red onions into wedges

Add the sliced chicken and red onion wedges to a baking tray with a drizzle of olive oil and a pinch of salt and pepper 

Sprinkle the dried oregano over the chicken

Put the tray in the oven for 15-20 min or until the onion wedges are tender and the chicken is cooked through (no pink meat!)

Meanwhile, rip the mini baguette rolls into rough bite-sized pieces 

Add them to a separate baking tray with a drizzle of olive oil and a pinch of salt

Give everything a good mix up and put the tray in the oven for 8-10 min or until golden and crispy – these are your croutons

Meanwhile, chop the capers finely

Peel and finely grate the garlic 

Shave half of the Italian hard cheese with a peeler until you end up with a pile of cheese shavings 

Grate the remaining cheese finely

Combine the chopped capers, grated garlic (Don't like raw garlic? Use half!), Dijon mustard, natural yoghurt and half the grated cheese with the white wine vinegar and 1 tbsp [2 tbsp] cold water

Season with a pinch of salt and pepper – this is your Caesar dressing

Tear the red gem lettuce[s] into rough bite-sized pieces

Once everything's cooked, add the torn red gem, remaining grated cheese, croutons, and red onion petals to a large mixing bowl 

Add the Caesar dressing and give everything a good mix until evenly coated in the dressing
