Cooking Instructions
Instructions for 2 people (double for 4)
1 Ultimate Club Sandwich & Cheesy Truffle Chips

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Chop the potatoes (skins on) into chips

Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper

Put the tray in the oven for 20-25 min or until golden and crisp

While the chips are in the oven, place your hand flat onto the chicken breast[s]

Slice in half as if you were cutting a burger bun, so you are left with 2 [4] thinner pieces 

Chop the bacon in half

Add the chicken and chopped bacon to a separate baking tray and put the tray in the oven for 15 min or until the chicken is cooked through (no pink meat!) and the bacon is crispy

While the chicken and bacon are cooking, slice the tomato[es] finely

Rip 2 [4] outer leaves from the little gem lettuce[s] and chop them in half

Chop the remaining little gem into wedges

Combine the wholegrain mustard with the mayonnaise and 1 tsp [2 tsp] cold water – this is your mustard mayonnaise

Grate the cheddar cheese

Cut the avocado[es] in half lengthways and remove the stone[s] using a teaspoon

Scoop the avocado out of its skin using a spoon and slice finely

Once the chicken and bacon are done, remove the tray from the oven and set aside

Put the ciabatta rolls in the oven for 2-3 min or until warmed through

6 Ultimate Club Sandwich & Cheesy Truffle Chips

Transfer the cooked chicken to a clean board shred it roughly using two forks – this technique is known as 'pulling'

7 Ultimate Club Sandwich & Cheesy Truffle Chips

Sprinkle the grated cheese over the chips and return them to the oven for 2-3 min or until melted

Once done, drizzle the cheesy chips with the truffle oil – these are your truffle chips

Slice the warmed ciabatta rolls in half
