Put the tray in the oven for 20-25 min or until golden and crisp
While the chips are in the oven, place your hand flat onto the chicken breast[s]

While the chicken and bacon are cooking, slice the tomato[es] finely
Rip 2 outer leaves from the little gem lettuce[s] and chop them in half
Chop the remaining little gem into wedges
Combine the wholegrain mustard with the mayonnaise and 1 tsp [2 tsp] cold water – this is your mustard mayonnaise
Grate the cheddar cheese

Once the chicken and bacon are done, remove the tray from the oven and set aside
Put the ciabatta rolls in the oven for 2-3 min or until warmed through
Transfer the cooked chicken to a clean board shred it roughly using two forks – this technique is known as 'pulling'
Sprinkle the grated cheese over the chips and return them to the oven for 2-3 min or until melted
Once done, drizzle the cheesy chips with the truffle oil – these are your truffle chips
Slice the warmed ciabatta rolls in half
Assemble your sandwiches with the mustard mayonnaise, little gem, sliced tomato, pulled chicken, sliced avocado and crispy bacon
Using a serrated knife, slice the sandwiches in half into triangles then skewer together
