Cooking Instructions
Instructions for 2 people (double for 4)
1 Cheeky Chicken Tikka

Boil a kettle

Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 15-20 min or until it's tender with a slight bite

Once cooked, drain and return it to the pot and keep covered until serving

 

2 Cheeky Chicken Tikka

Meanwhile, cut the chicken breast[s] into bite-sized pieces 

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add the chopped chicken and cook on both sides for 3 min or until lightly browned

Once done, set aside and reserve the pan

3 Cheeky Chicken Tikka

Meanwhile, peel and finely slice the brown onion[s]

Peel and finely chop (or grate) the garlic

Peel (scrape the skin off with a teaspoon) and grate the ginger 

Dice the tomatoes

4 Cheeky Chicken Tikka

Return the reserved pan to a medium heat with a drizzle of vegetable oil

Once hot, add the chopped onion and cook for 3-4 min or until softened

Add the grated ginger, chopped garlic, tomato paste, garam masala, ground coriander and chilli flakes (Can't handle the heat? Go easy!) 

Cook for 1-2 min or until fragrant

 

5 Cheeky Chicken Tikka

Meanwhile, dissolve the chicken stock cube[s] in 150ml [250ml] boiled water 

Reboil a full kettle

Add the chicken stock, cooked chicken and diced tomatoes to the pan, give everything a good mix up and bring to the boil

Once boiling, reduce the heat to medium-low and cook for 10 min or until the chicken is cooked through (no pink meat!) and the sauce has thickened 

6 Cheeky Chicken Tikka

Meanwhile, wash the spinach, then add it to a colander and pour boiled water all over it so that it starts to wilt

Rinse the wilted spinach under the cold tap until it's cool 

Once cool, squeeze the water out of the spinach as much as you can

7 Cheeky Chicken Tikka

Chop the coriander finely, including the stalks 

Add half the chopped coriander and a pinch of salt to the cooked brown rice and give it a good mix up – this is your coriander rice

Once the sauce has thickened, add the wilted spinach and natural yoghurt and give it a good mix up – this is your chicken tikka masala
