Our version of Pad Thai uses Thai noodles, juicy chicken and sugarsnap peas for sweetness and crunch. Not forgetting one of the key flavours - tamarind. Originally from Africa, tamarind has that sweet and sour flavour we most commonly associate with this popular, much loved dish.

Cooking Instructions
Instructions for 2 people (double for 4)
1 Cheeky Chicken Pad Thai

Boil a kettle

Break the noodles and add them to a pot of salted boiling water over a high heat

Cook for 5-8 min, or until tender

Once cooked, drain and rinse under cold water (this gets rid of the excess starch)

2 Cheeky Chicken Pad Thai

Meanwhile, place your hand onto the chicken breast over a chopping board

Slice in half as if you were cutting a burger bun, so you are left with two thinner pieces

 

3 Cheeky Chicken Pad Thai

Slice the chicken into strips 

Add the chicken, cornflour and soy sauce to a bowl

Mix well and set aside to marinate 

4 Cheeky Chicken Pad Thai

Meanwhile, dissolve the stock cube[s] in 150ml [300ml] boiled water

Peel and finely chop (or grate) the garlic

Slice the spring onion[s] finely, keeping the white and green parts separated

Chop the peanuts (or crush in their bag)

5 Cheeky Chicken Pad Thai

Combine the tamarind paste, 2 tbsp [4 tbsp] sugar (preferably brown), 3 tbsp [6 tbsp] boiled water and chilli flakes (can't handle the heat? Go easy!)

Mix well until the sugar has dissolved

Add a large pinch of salt - this is your tamarind sauce 

6 Cheeky Chicken Pad Thai

Heat a wide-based pan (preferably non-stick) with 1-2 tbsp vegetable oil over a medium-high heat

Once hot, add the garlic and stir for 30 seconds -1 min or until fragrant

Add the chicken and cook until browned (approx. 1-2 min)

Add the stock and cook for a further 4-6 min

7 Cheeky Chicken Pad Thai

Meanwhile, chop the coriander, including the stalks

Add the sugarsnap peas to the chicken and cook for a further 3 min or until the chicken is cooked through

Add the noodles, tamarind sauce and spring onion whites

Use two spatulas toss until the sauce has fully coated the noodles
