Cooking Instructions
Instructions for 2 people (double for 4)
1 Buffalo Chicken, Ranch Dip & Sweet Potato Fries

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6

Boil a kettle

Peel and cut the sweet potatoes into chips

Add the sweet potato chips to a baking tray with a drizzle of vegetable oil and a pinch of salt

Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp

Meanwhile, cut the chicken thighs into bite-sized pieces

Add the cornflour and a pinch of salt to a bowl

Add the chicken pieces to the cornflour and give everything a good mix up so the chicken pieces are fully coated in cornflour 

4 Buffalo Chicken, Ranch Dip & Sweet Potato Fries

Heat a large, wide-based pan (preferably non-stick) with 4 tbsp [8 tbsp] vegetable oil over a high heat

Once hot, add the floured chicken and cook for 4 min on each side, or until nicely golden and crisp

Once done, transfer the chicken to kitchen paper and wipe the pan clean

Meanwhile, Heat a pot with 30g [60g] butter on a low heat

Once melted remove the pan from the heat and add the sriracha, cider vinegar and 1 tsp [2 tsp] sugar

mix together until it all combines and becomes a sauce like consistency – this is your buffalo sauce

6 Buffalo Chicken, Ranch Dip & Sweet Potato Fries

Slice the baby gem lettuce[s] into quarters

Chop the chives finely, then peel and grate the garlic

Combine the Sour creamDijon mustard, grated garlic and chopped chives in a small bowl 

Add a drizzle of olive oil and season with a pinch of salt and pepper and give everything a good mix up – this is your ranch dip

Return the pan to a medium heat

Once hot, add the buffalo sauce and cooked chicken and toss until the chicken is fully coated in the sauce – this is your buffalo chicken
