Cooking Instructions
Instructions for 2 people (double for 4)
1 Brazilian Black Beans & Limey Chicken

Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 20-25 min or until it's tender with a slight bite

Once cooked, drain and return it to the pot and keep covered until serving 

2 Brazilian Black Beans & Limey Chicken

While the rice is cooking, peel and finely chop the brown onion[s]

Heat a second pot with a drizzle of vegetable oil and a large knob of butter over a very low heat

Once hot, add the chopped onion with a pinch of salt and cook for 6-7 min or until softened

Boil half a kettle 

3 Brazilian Black Beans & Limey Chicken

Heat a large, wide-based pan (preferably non-stick with a matching lid) over a medium-high heat

Once hot, add the chicken breast[s] with a generous pinch of salt and cook for 3 min on each side or until golden

Add a couple of splashes of water to the pan and cover with a lid

Cook for a further 10-15 min or until the chicken is cooked through (no pink meat!)

4 Brazilian Black Beans & Limey Chicken

Meanwhile, peel and finely chop (or grate) the garlic 

Dissolve the Knorr chicken stock cube[s] and chipotle paste in 200ml [320ml] boiled water 

Drain and rinse the black beans

5 Brazilian Black Beans & Limey Chicken

Once the onion has softened, increase the heat to medium, add the chopped garlic, smoked paprika and ground cinnamon to the pan and cook for 30 sec or until fragrant

Add the drained black beans and chicken stock and cook for 7 min 

6 Brazilian Black Beans & Limey Chicken

While the black beans are cooking, pick the coriander leaves from their stems, discarding the stems 

Trim, then slice the spring onion[s] finely

Cut the red chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and chop finely

Once done, add 30g [60g] butter to the beans and mash them until smooth – these are your Brazilian black beans 

7 Brazilian Black Beans & Limey Chicken

Once done, transfer the chicken to a clean board and shred it apart, using two forks – this technique is known as ‘pulling’

Return the shredded chicken to the pan with the mango chutney, chopped spring onion and chopped chilli (can't handle the heat? Go easy!)

Zest and juice 1/2 [1] lime into the pan and give everything a good mix up – this is your limey chicken
