Our twist on bánh mì, a popular sandwich in Vietnam, stars freshly made sesame croutons sprinkled over a salad of carrot ribbons, cucumber, shallot and baby leaf salad. Toss in sweet hoisin dressing and top with shredded chicken. Ăn ngon nhé (dig in)!

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Place your hand flat onto the chicken breast[s]

Slice in half as if you were cutting a burger bun, so you are left with 2 [4] thinner pieces

Add the chicken to a tray and drizzle with 1/2 tbsp [1 tbsp] vegetable oil and season with a pinch of salt

Put the tray in the oven for 12-15 min or until the chicken is cooked through (no pink meat!)

Meanwhile, peel the carrots, then continue to peel lengths until you end up with a pile of carrot 'ribbons'

Slice the cucumber into discs

Slice each individual cucumber disc into matchsticks

Peel and finely slice the shallot[s]

Rip the ciabatta into rough, bite-sized pieces

Add the ripped ciabatta to a baking tray with the toasted sesame oil, black sesame seeds and a pinch of salt

Put the tray in the oven for 5 min or until golden and crisp – these are your sesame croutons

Add the hoisin sauce, rice vinegar, soy sauce, 1 tsp [2 tsp] sugar and 1 tbsp [2 tbsp] vegetable oil to a large bowl with a pinch of salt and stir it all together – this is your dressing

Strip the mint leaves from their stems and chop them roughly, discard the stems

Chop the coriander finely, including the stalks

Add the carrot ribbons, cucumber matchsticks, sliced shallot, baby leaf salad, sesame croutons and most of the chopped herbs to the dressing and give it a gentle mix up – this is youbánh mì salad

Once the chicken is cooked, transfer it to a clean board and shred it apart, using two forks – this technique is known as ‘pulling’
