Cooking Instructions
Instructions for 2 people (double for 4)
1 2348 - Bangin' Chicken Balti

Peel and finely slice the brown onion[s]

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into large bite-sized pieces 

Heat a large, wide-based pan (preferably non-stick) over a medium heat with 2 tbsp [4 tbsp] vegetable oil

Once hot, add the sliced onion and pepper with a pinch of salt and cook for 6-7 min or until softened

Meanwhile, rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 15-20 min or until it's tender with a slight bite

Once cooked, drain, return it to the pot and keep covered until serving

Whilst the rice is cooking, boil a kettle

Peel and finely chop (or grate) the garlic

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Dice the tomatoes

Chop the chicken breast[s] into rough bite-sized pieces 

Dissolve 1/2 [1] Knorr chicken stock cube in 200ml [400ml] boiled water 

Add the tomato paste – this is your tomato stock 

 

5 2348 - Bangin' Chicken Balti

Add the chopped garlic and ginger to the softened onions and cook for a further 2 min

Add the curry powder, ground paprikaground coriander and ground cumin and cook for 1 min or until fragrant

6 2348 - Bangin' Chicken Balti

Once fragrant, add the diced tomatoes and chopped chicken and cook for 3-4 min or until the chicken has browned

Add the tomato stock and cook for 8-10 min or until the chicken is cooked through (no pink meat!) and the sauce has thickened to a curry like consistency – this is your bangin' chicken balti

Chop the coriander finely, including the stalks
