Cooking Instructions
Instructions for 2 people (double for 4)
1 Baharat-Spiced Chicken & Courgette Skewers

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Soak the skewers in cold water

Boil a kettle

Chop the chicken breast[s] into 12 [24] chunks 

Chop the courgette[s] into 12 [24] chunks

2 Baharat-Spiced Chicken & Courgette Skewers

Combine the baharat, chopped chicken, courgette, 1 tbsp [2 tbsp] olive oil and 1/2 [1] tsp of both salt and pepper in a large bowl

 

 

 

3 Baharat-Spiced Chicken & Courgette Skewers

Lace the chicken and courgette chunks onto the skewers (alternating ingredients) 

Transfer the chicken skewers to a baking tray and put it in the oven for 15 min, or until the chicken is cooked through (no pink meat!)

4 Baharat-Spiced Chicken & Courgette Skewers

Meanwhile, add the bulgur wheat to a pot with plenty of boiled water (the same as you would for pasta)

Cook over a high heat for 10-15 min or until tender with a slight bite, then drain and return to the pot

 

5 Baharat-Spiced Chicken & Courgette Skewers

Meanwhile, peel and finely chop (or grate) the garlic

Peel the red onion[s], cut them in half and slice finely

 

 

6 Baharat-Spiced Chicken Skewers

Whisk together the honey, apple cider vinegar and 1 tbsp [2 tbsp] olive oil in a small bowl – this is your dressing 

Chop the dill roughly, including the stalks

7 Baharat-Spiced Chicken Skewers

Heat a large, wide-based pan (preferably non-stick) over a medium heat with 1 tbsp [2 tbsp] vegetable oil

Once hot, add the onion and garlic and cook for 2-4 min, or until browned and crispy

Remove the pan from the heat and mix in the cooked bulgur

Season lightly with salt and pepper
