Nut lovers, this one's for you. It's our punchy peanut and chicken stew with tender chicken breast simmered in a rich, nutty tomato sauce, and served with sun-dried tomato couscous on the side.

Now, let's get started!
Boil a kettle
Heat a large, wide-based pan (preferably non-stick, with a matching lid) with a drizzle of vegetable oil over a high heat
Once hot, add the diced chicken breast and cook for 2-3 min or until golden
Meanwhile, add the couscous and sun-dried tomatoes to a heatproof bowl with 200ml [400ml] boiling water, cover and set aside
Fluff with a fork before serving – this is your sun-dried tomato couscous
Dissolve 1/2  Knorr chicken stock cube in 150ml [250ml] boiled water
Add the baharat, ground cumin and cayenne pepper (can't handle the heat? Go easy!) to the chicken and cook for 30 sec or until fragrant
Once fragrant, add the peanut butter, tomato frito and chicken stock and cook for 1 min
Add the shredded kale and cook, covered, for 1 min further or until the kale has wilted and the chicken is cooked through (no pink meat!) – this is your peanut & chicken stew
Set the peanut & chicken stew and sun-dried tomato couscous in the centre of the table, ready to share
