Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let’s get started!
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Cut the chicken breast[s] into strips
Heat a large wide-based pan (preferably non-stick) over a high heat with a drizzle of vegetable oil
Add the chicken breast strips with a pinch of salt and pepper and cook for 6-8 min or until cooked through (no pink meat!)
While the chicken is cooking, tear the rosemary & sea salt focaccia into bite-sized pieces and add to a baking tray with a drizzle of olive oil and a pinch of salt
Put the tray in the oven for 5-6 min or until crisp – these are your focaccia croutons
Meanwhile, separate the outer leaves of the little gem lettuces
Shred the remaining little gem lettuce inner core[s]
Peel and finely chop (or grate) the garlic
Add the chopped garlic (don't like raw garlic? Go easy!) to a bowl with the Dijon mustard, white wine vinegar and mayonnaise
Add the capers, 1 tbsp [2 tbsp] olive oil and 1/2 tbsp [1 tbsp] water
Season with a pinch of pepper and give everything a good mix up – this is your Caesar dressing
Peel the Italian hard cheese with a vegetable peeler to create cheese shavings
Tip: Grate any remaining cheese
Add the little gem leaves and shredded little gem to your bowls and top with the cooked chicken strips and Italian hard cheese shavings
Drizzle over the Caesar dressing and add the focaccia croutons and any remaining grated cheese
