Peel and finely chop the brown onion[s]
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat
Once hot, add the chopped onion with a pinch of salt and cook for 6-8 min or until softened
Meanwhile, peel and finely chop (or grate) the garlic
Drain and rinse the canned lentils
Add the basmati rice and 250ml [500ml] cold water to a pot with a lid and bring to the boil over a high heat
Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked
Once cooked, remove from the heat and keep covered until serving
Meanwhile, boil a kettle
Once the onion has softened, increase the heat to medium-high and add the beef mince with a generous grind of pepper
Cook for 3-4 min or until browned all over, breaking it up with a wooden spoon as you go
Meanwhile, dissolve the beef stock cube[s] in 200ml [375ml] boiled water
Once browned, add the ground turmeric, ground cumin, cinnamon, allspice, chopped garlic and tomato paste and cook for 1 min or until fragrant
Add the drained lentils, beef stock, chopped tomatoes and soy sauce and bring to the boil over a high heat
Once boiling, reduce the heat to medium-low and cook for 6-8 min or until thickened – this is your warming Persian beef & lentil stew
Meanwhile, strip the mint leaves from their stalks and chop them roughly
Serve the warming Persian beef & lentil stew over the basmati rice
Garnish with the chopped mint
