Cooking Instructions
Instructions for 2 people (double for 4)
1 Thai Beef Meatball Massaman Bake

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Add the beef mince to a bowl with the panko breadcrumbssoy sauce and a pinch of salt and stir it all together

Divide the beef mince into 6 [12] and shape them into meatballs

Refrigerate the meatballs until step 3

Peel and chop the red onion[s] into wedges

Chop the waxy potatoes into bite-sized pieces

Add the onion wedges and chopped potatoes to a deep baking tray (or oven-proof dish) with a drizzle of vegetable oil and give everything a good mix up

Add the meatballs and put the tray in the oven for an initial 20 min or until the meatballs and potatoes have browned

Meanwhile, boil a kettle

Remove the coconut cream from the sachet[s] and chop it roughly

Dissolve the chopped coconut creamred curry paste and 1 tsp [2 tsp] sugar in 300ml [550ml] boiled water

Add the ground cinnamon and fish sauce and mix well until combined – this is your massaman stock

Slice the green beans in half

6 Thai Beef Meatball Massaman Bake

Once the meatballs are golden, remove the tray from the oven and spoon away any excess oil

Add the sliced green beans and kaffir lime leaves to the tray and pour the massaman stock over everything

Return the tray to the oven for 20 min further or until the meatballs are cooked through and the sauce is thick and rich – this is your beef meatball massaman bake

7 Thai Beef Meatball Massaman Bake

While the oven works its magic, slice the red chilli[es] finely into rounds 

Once done, give the beef meatball massaman bake a good mix up in case the sauce has separated a little
