Cooking Instructions
Instructions for 2 people (double for 4)
1 Sticky Chilli Beef Burritos & Lime Mayo

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Add the basmati rice and 175ml [350ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has been absorbed and the rice is cooked, then remove from the heat and keep covered until serving

2 Sticky Chilli Beef Burritos & Lime Mayo

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add the beef mince with a generous pinch of salt and cook for 4 min or until coloured, breaking it up with a wooden spoon as you go

 

3 Sticky Chilli Beef Burritos & Lime Mayo

While the mince is cooking, chop the tomato[es] finely

Cut the lime[s] in half

Combine the juice of 1/2 [1] lime with the mayonnaise and a drizzle of olive oil

Season with a pinch of salt and pepper – this is your lime mayo

4 Sticky Chilli Beef Burritos & Lime Mayo

Once browned, add the smoked paprika and chilli flakes (can't handle the heat? Go easy!) to the beef and cook for 1 min or until fragrant

Add the chopped tomato, chipotle paste and honey and cook for 3-5 min or until the tomatoes begin to break down and the beef becomes crispy and sticky – this is your sticky chilli beef

Meanwhile, add the tortillas to a baking tray and put the tray in the oven for 3-4 min or until warmed through and beginning to crisp slightly

6 Sticky Chilli Beef Burritos & Lime Mayo

Shred the little gem lettuce[s] finely 

Grate the cheddar cheese

7 Sticky Chilli Beef Burritos & Lime Mayo

Cut the remaining lime into wedges

Once cooked, fluff the rice with a fork and season with a pinch of salt
