Cooking Instructions

1 Seared Rump Steak, Tomato & Rocket Salad

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Chop the waxy potatoes into bite-sized pieces

Add the chopped potatoes to a baking tray with a drizzle of vegetable oil and a pinch of salt and give everything a good mix up

Put the tray in the oven and cook for 25-30 min or until the potatoes are golden and crispy – these are your crispy potatoes

Meanwhile, shave the Italian hard cheese with a peeler, until you end up with a pile of cheese shavings 

Once you can't peel anymore, grate the remaining cheese

Slice the cherry tomatoes in half 

Pat the rump steaks dry with a kitchen towel, rub them with vegetable oil and season both sides generously with salt

 

5 Seared Rump Steak, Tomato & Rocket Salad

Heat a large, wide-based pan (preferably non-stick) over a high heat and once very hot add the steaks 

For medium-rare, cook for 2-3 min on each side

For medium, cook for 3-4 min on each side

For rare, cook for 2 min max on each side

Tip: Don’t be tempted to move the steaks around too much in the pan – this will stop them from browning

Once done, transfer the steaks to a plate and leave them to rest for 5 min

Meanwhile, add the balsamic vinegar and 2 tbsp [4 tbsp] olive oil to a large bowl with a pinch of salt and mix well to combine

When the steaks have rested, pour the resting juices into the dressing and slice the steaks finely

Wash the rocket and pat it dry 

Add the sliced tomatoes, rocket and grated cheese to the bowl and give everything a good mix up – this is your dressed rocket salad
